Vegan Lemon Raspberry Cake
A cake so delicious, you'd never know it's vegan! 6" cakes are triple layer and serve 4-8 people; 8" cakes are triple layer and serve 8-12 people; 9" cakes are triple layer and serve 12-16 people; half sheet cakes are 2-layer and serve 40-50 people.
Ingredients: Cake: Flour, cornstarch, sugar, water, canola oil, white vinegar, lemon extract, lemon zest, baking soda, salt, baking powder, vanilla extract. Filling: raspberries, sugar, lemon juice, water. Frosting: Powdered sugar, vegan butter (palm and palm kernel oil, water, sunflower oil, salt, pea protein, sunflower lecithin, lactic acid, natural flavor, annatto, vitamin a palmitate), raspberry jam, water, aquafaba powder (chickpea decoction powder), vanilla extract, salt. Garnished with fresh raspberries.
